Fosh Food the boutique culinary centre in Palma has launched an exciting new selection of four hands-on cookery courses for the Autumn. Beginning in October the themed classes cover a four week period with pupils attending one evening class each week. Classes are two hours long and explore different techniques, ingredients and skills required to produce mouth watering dishes.

Themes for the autumn include pasta and rice which will teach clients how to make great paella, perfect risotto and delicious Dim Sum. A Regional Spanish Cookery course presented by Marc Fosh introduces a guide to the different regional cuisines of Spain including Galician, Basque and Andalucian cookery. The South East Asian Cookery course will focus on the mysterious and spicy delights of Thailand, Malaysias laksas and curries, whilst the Laos evening will focus on rural dishes from this lesser known country. For shellfish lovers this course is designed to teach the secrets of preparing perfect bisque, grilling tasty squid and poaching langoustines to just the right texture.

“We received an incredible amount of requests for hand-on courses from extremely enthusiastic people looking to delve deeper into cooking,” says Rob Bragognolo, director of Fosh Food, explaining why the cookery school has launched the range of classes. “We hope people will be able to pick up life long skills that they can use to eat well, and impress their friends from our great team of chefs,” he added.

The same chef will preside over the course each week and with around 8 people in a class the two hour sessions promise to be lively, entertaining and informative. The two hour classes, which are one of a kind on Mallorca, will ensure pupils learn a fabulous set of new culinary skills as they cook with some of the island’s best chefs.

Fosh Food show cooking evenings will run in parallel with the hands – on cookery courses. Autumn demonstrations include Scandinavian Cooking, Kashmiri cooking and Asian Fusion. The evenings are interactive entertainment chatting with the chef as they demonstrate the techniques and ingredients behind the different food styles. Prices begin from 45 Euros an evening and include wine, conversation and tasting of the dishes.

- Marc Fosh was born in Kent before moving to Spain in 1991 where he became involved with the Spanish resurgence onto the global gastronomy map and where he developed his own unique style of cuisine focusing on fresh ingredients and quality of produce, to which he adds a touch of inspired genius.
